Using this command, cron works and email works on completion. It creates the log file but it’s empty.
Does it maybe only write to log file when the job completes?
./vertical cron "15 22 * * *" --email --subject '"Successful Backup"' --failure -subject '"Backup Failed"' --exclude-disk *TB* --no-chunk-listing "&> /vmfs/volumes/5c436473-36ab17be-e575-a0b3cce17ffe/verticalbackup/vertical.log"
Is there another way I can monitor job progress when it’s running?

The log file is buffered so you may need to wait until the end to see its content.
I can't think of a better way to monitor the progress by manually editing the cron file
/var/spool/cron/crontabs/root to add the
--log -v option before the backup command.
